"School House Rock" Burrito

This week's special begins on a steamed sundried tomato tortilla, cilantro-lime rice, and smoky black beans. We add chipotle-marinated chicken thighs, rosemary-roasted potatoes, grilled tinkerbell peppers, and roasted red onion. We finish this one off with loaded smoked gouda queso and serve it with house-fried tortilla chips!
